• Braise kelp, then slice.

• Put live crayfish on ice for 15 minutes, then boil in 4% brine for about 2 minutes (depending on size). Plunge into ice water.

• Peel the tails, keeping the biggest attached to the body.

40g (13/8 oz) crayfish flesh / 8g (1/4oz) crayfish sauce / 3g (0.1oz) stonecrop / 3g (0.1oz) crayfish oil

4 | Shiitake mushrooms, brown butter & three-cornered garlic

• Roast the mushrooms at 200°C (400°F) for 3 minutes (depending on size).
